Breakfast Peanut butter Chocolate Chip Cakes

Ingredients

1.5 cups rolled oats

1/2 cup plus 1/4 cup vanilla almond milk

1/4 cup peanut butter

2 tablespoons mashed bananas

1 egg

1.5 tablespoon brown sugar

1/2 teaspoon baking powder

1 teaspoon vanilla

pinch salt

2 tablespoon vegan chocolate chips

Recipe

  1. Preheat oven to 375 degrees.
  2. In a medium bowl mix together rolled oats, vanilla almond milk, mashed banana, egg, brown sugar, baking powder, vanilla, half the peanut butter and salt.

3. Fill each muffin tin with 2 tablespoons of batter. Place remaining 2 tablespoons of peanut butter and chocolate chips on top.

4. Add 1 teaspoon of remaining batter on top of the scoop of peanutbutter and chocolate chips.

5. Bake for 20 minutes and serve.
